Curriculum Description

The Dietary Managers Program prepares individuals to be a trained foodservice professional. Dietary Managers specialize in cost-containment programs, supervise staff, develop and maintain high levels of sanitation, and partner with Registered Dietitian to understand and meet the basic nutritional needs of clients.

Employment opportunities include hospitals, correctional centers, nursing homes, public health agencies, schools, retirement centers, hospices, home care agencies, and commercial food service systems.

Course work includes content related to food, nutrition, communication, management, and sanitation. The Dietary Manager student must complete all course requirements including 150 clinical experience hours. All students are precepted by a Registered Dietitian. The course is offered as Distance Learning via the Internet.

Students are eligible for student Dietary Managers Association (DMA) membership. Upon completion of the required course work and 150 hours of field experience the graduate is eligible for the credentialing exam and active DMA membership. For this purpose, student names/addresses will be sent to DMA headquarters when students enroll in the program. A graduate list will be sent to DMA headquarters within two weeks of graduation.

Admission Information


Students applying for admission to the Gaston College Dietary Managers Program MUST meet the following requirements for GENERAL ADMISSION to the college:

  1. Complete general admission application.
  2. Completion of ASSET/COMPASS Placement Test.
    1. Individuals who have earned a “C” or better in both college-level Math and English courses from a regionally accredited institution shall have the test waived.
    2. The ASSET/COMPASS Placement Test may also be waived of any person who has scored 500 on the verbal section and 520 on the math section of the SAT or who has a composite score of 22 on the ACT.
    3. ASSET/COMPASS Placement Test and completion of any identified developmental courses are required prior to acceptance into the Dietetic Technician program.
  3. Attend a New Student Orientation or complete an On-Line New Student Orientation.
  4. Submit official transcript of high school grades with graduation date OR GED scores.
  5. Submit official college transcript(s), when applicable.
  6. Applicants from countries whose language is not English must demonstrate proficiency in the English language by scoring no less than 540 on the Test of English as a Foreign Language (TOEFL).
  7. Applicants must be 18 years of age.

ADDITIONAL REQUIREMENTS TO BE ELIGIBLE TO SUBMIT AN APPLICATION TO THE DIETETIC TECHNICIAN PROGRAM:

  1. Must have an overall grade point average of 2.0 or better in required college courses.
  2. Must have grades of “C” or better in all related courses.
  3. Must have completed the required Biology and Chemistry courses within 5 years from the date of application to the program.
  4. Criminal Background Checks, Fingerprinting and Annual Drug Screening. In order to comply with current Student Facility Affiliation Agreements students admitted into the Dietetic Technician Program will be required to complete successful Criminal Background checks and Drug Screens according to Gaston College procedures before being placed in a clinical facility. The facility reserves the right to deny the student access to the facility. If the student is denied access, the student will not be able to the program. Completion of clinical experience is required for the satisfactory completion of the program. More information will be provided upon conditional acceptance into the program.
  5. CPR Certification. The student must be currently certified in infant, child and adult CPR from the American Heart Association, the Red Cross or you may go on line to www.CPRTODAY.com. You must submit a copy of the CPR certification card prior to beginning the program.
  6. Applicants should be aware that travel in “out-of-service” areas may be required for clinical fieldwork.
  7. A completed North Carolina Community College Student Medical Form documenting satisfactory emotional and physical health is required before entrance into the program by date to be announced by the Dietetic Technician Department Chairperson.

The following criteria will be utilized by the Admissions Committee in the selection process of recommending applicants for admission to the Dietary Managers program:

  1. The number of related courses completed by end of the fall semester prior to making application.
  2. Grade Point Average (GPA) in related courses.

The selection of applicants into the Program is based on the above criteria. The final selection of applicants into the program is made by the Department Chairman in consultation with the Dean of Health Sciences.

Health Requirements


  1. Physical health is defined as being free of disabling or contagious disease, being able to perform fine and gross motor skills, and being able to perform normal weight-bearing activities. Assessment of the student’s physical health is made, with the use of information from the physical examination, performed by the applicant’s physician/nurse practitioner/physician assistant and laboratory tests. Continued assessment of the student’s physical health is made by timely documented updated tests and reports and by faculty observations of the students.

    IMMUNIZATION REQUIREMENTS

    ALL STUDENTS MUST HAVE THE RESULTS OF A TUBERCULIN SKIN TEST DONE WITHIN ONE YEAR PRIOR TO ENROLLMENT IN THE GASTON COLLEGE DIETETIC TECHNICIAN PROGRAM.STUDENTS 18 YEARS OF AGE OR OLDER, BORN IN 1957 OR LATER. REQUIRED:

    1. STUDENTS 18 YEARS OF AGE OR OLDER, BORN IN 1957 OR LATER. REQUIRED:
      • 3 DTP or Td doses
      • 1 MEASLES (Rubeola) dose, on or after 15 months of age.*
      • 1 RUBELLA dose on or after 15 months of age.**
      • 1 MUMPS dose on or after 15 months of age.
      • 1 Td dose within the last 10 years.
      • 1 MEASLES, MUMPS, RUBELLA (MMR) booster dose in 1980 or later.
    2. STUDENTS BORN PRIOR TO 1957. REQUIRED:
      • 3 DTP or Td doses
      • 1 RUBELLA dose. **
      • 1 Td dose within the last 10 years.
    3. STUDENTS OVER 50 YEARS OF AGE. REQUIRED:
      • 3 DTP or Td doses.
      • 1 Td dose within the last 10 years.
    4. History of varicella (chicken pox) OR Varcilla Titer. (History of varicella is acceptable without physician verification.)

      * History of physician diagnosed measles is acceptable.
      ** ONLY laboratory proof of immunity to rubella is acceptable (Rubella titer). Rubella is not required if 50 years or older.
       
    5. The Hepatitis B Vaccine (recommended immunization) must be completed (series of three (3) injections) by the end of the spring semester, Freshman Year.

      Note: Those students who do not pursue immunization for Hepatitis B will required to sign a waiver releasing Gaston College and the Dietary Manager Program of any responsibility for the possibility of their contracting Hepatitis B.
       
  2. Emotional health is defined as reacting appropriately to stressful situations, withstanding everyday environmental stresses with little difficulty, using healthy coping mechanisms, and understanding one’s own ability to cope with stressful situations.

    Assessment of emotional health of applicants is made through the use of physical examinations, references, letters from psychiatrists or therapists if intensive therapy is in progress or has occurred, and psychological evaluations, if necessary.
     
  3. Communication: Gaston College will communicate with Dietetic Technician students by means of e-mail, telephone answering machines and the US mail service.
